CARCAJRUN BIO* ist ein Rotwein aus biologischem Anbau, der von LA CHIMERA in der Region Piemonte, Italien, produziert wird. Dieses biologische Etikett stammt aus Weinbergen, die sich in 750 Metern H\u00f6he befinden, in einem lockeren, schottrigen Boden mit Gesteinen aus Schiefer und Kalkstein, die dem Wein eine charakteristische territoriale Identit\u00e4t verleihen. Die Ernte erfolgt in der ersten H\u00e4lfte des Septembers, w\u00e4hrend die Vinifikation eine Mazeration auf den Schalen von 7-10 Tagen und eine malolaktische Fermentation umfasst, die gleichzeitig mit der alkoholischen Fermentation unter Inokulation von Bakterien durchgef\u00fchrt wird. Alkoholgehalt: 14,5. Weinkeller: Guyot. Ernte\/Jahrgang: Erste H\u00e4lfte des Septembers. Organoleptische Notizen: Obwohl es sich um einen Bergwein handelt, ist das Mundgef\u00fchl weich und fruchtig. Es ist ein Alltagswein, der nicht anspruchsvoll ist. Boden: Locker, reich an Schotter; die Gesteine auf der Hangseite sind \u00fcberwiegend Schiefer und Kalkstein. Weinberg: Finiere, Ausrichtung: S\u00fcden, H\u00f6he: 750 m \u00fc.d.M., Fl\u00e4che: 0,3 Ha, Rebst\u00f6cke\/ha 5000, Pflanzabstand 2,4×0,8. Vinifikation\/Reifung: Traubenpressung und anschlie\u00dfend Mazeration von etwa 7-10 Tagen auf den Schalen. Die malolaktische Fermentation erfolgt gleichzeitig mit der alkoholischen Fermentation unter Inokulation von Bakterien. Ertrag pro Hektar: 50-55 q.li\/Ha.
