MARESCO PAS DOS'E M.C. is a sparkling white wine produced by WENO – Winery in Valle d'Itria, located in the renowned Apulian region. This IGT is made from grapes grown in the vineyard of Contrada San Marco in Locorotondo, on calcareous soils with medium texture at 340 metres above sea level. The winemaking involves careful fermentation at low temperatures, with a portion of the wine aged in French oak barriques, giving the product a unique complexity and refined personality. Alcohol content: 12 Vintage: Hand-harvested, strictly in 12 kg crates. Organoleptic notes: On the nose, floral notes of mimosa and yellow rose, followed by balsamic hints and a finish of wild fennel. The sapidity combines with a lively freshness, while on the palate it reveals a aftertaste of bread crust and melted butter. The 24-month ageing enhances its complexity and depth. Soil: Calcareous with medium texture in a hilly area at 340 m above sea level. Vineyard: Valle d'Itria, Locorotondo, Contrada San Marco. Winemaking/Ageing: Cooling the grapes in a cold room at a temperature of 2°C for 72 hours, pressing the whole grapes with a yield not exceeding 50% and fermentation of the must at low temperatures. 25% of the wine is aged in medium-toasted French oak barriques, undergoing malolactic fermentation and during tirage is blended with the mass aged in steel. Fermentation of the sparkling base at low temperatures. Yield per hectare: 5,000 kg/Ha.
