The 2018 SPERGOLA EXTRA BRUT Defratelli M.C. BIO* from C`A DE NOCI is a white sparkling wine from the hills of Quattro Castella, in Emilia Romagna. Certified organic, this product is made from grapes hand-picked with selection in the vineyard on clayey-silty hilly soils, cultivated using the spurred cordon method with 2 buds. The winemaking involves a short maceration with manual racking, without final pressing, which enhances the natural freshness and complexity of the fruit. Vintage: 2018 Alcohol content: 11.5 Winery: Spurred cordon with 2 buds. Harvest/Vintage: Manual in boxes with selection in the vineyard. Organoleptic notes: Deep golden colour with dense effervescence, intense notes of sourdough and spices, taut between horizons of hazelnuts and candied pear, crunchy, salty, tannic from the depth of these old roots. Soil: Hilly, clayey-silty. Vineyard: On the hills of Quattro Castella, south of the Po Valley at the borders with the Tuscan-Emilian Apennines, covering an area of 4.40 ha – non-intensive planting with drooping vegetation. Winemaking/Aging: The grapes are left in the cellar overnight to achieve natural cooling of the fruits, brief maceration during the first part of fermentation, progressive manual racking of the skins without final pressing.
