The 2022 CESANESE > (Maggiore) Metodo Ripasso from L'OLIVELLA is a still red IGT wine from the Lazio region of Italy. This wine is made from Cesanese grapes grown in volcanic soils rich in potassium, phosphorus, and magnesium, which give the product a unique personality. The manual harvest in crates, with careful selection of slightly dried grapes, ensures superior quality, while the winemaking involves a short maceration and two fermentations, the second in autoclave for at least 60 days, which enrich the wine with elegance and structure. Vintage: 2022 Alcohol content: 14.5 Winery: Guyot Harvest/Vintage: Manual in crates with selection in the vineyard upon reaching the right ripeness with careful choice of slightly dried grapes. Organoleptic notes: The delicate powder pink colour with antique pink reflections identifies its origin from Cesanese grapes. On the nose, it impresses with a clear and fruity bouquet, featuring wild strawberries, white peach, and light notes of white currant. Well-balanced sparkling on the palate between sapidity and freshness, providing a silky and full sensation. Wild strawberries, peaches, and white flowers repeat in the mouth, with citrus notes in the long finish. Soil: Volcanic origin rich in potassium, phosphorus, and magnesium. Vineyard: Vines/Ha 3,500 Winemaking/Aging: The maceration of the must with the skins lasts only a few hours to impart the typical colour. The first alcoholic fermentation takes place in steel tanks after the harvest and is followed by a resting period. At the beginning of spring, the second fermentation begins in autoclave, with a minimum sparkling period of 60 days.
