BIO* is a zero dosage sparkling white wine by CASEBIANCHE, produced in the renowned Campania region of Italy. Characterised by organic certification, this DOC wine is made from Fiano grapes cultivated in a vineyard owned by Elio with clay-limestone soil, which imparts complexity and minerality. The winemaking process involves fermentation and ageing in steel for six months, followed by bottle fermentation without the addition of sugars, yeasts or sulphites, thus maintaining an authentic and natural profile. Format: 0.75l Alcohol content: 11 Winery: Guyot bilaterale Harvest\/Vintage: Manual Organoleptic notes: Characterised by aromas of fresh fruit and citrus, such as green apple, oranges and grapefruit, floral notes of white flowers and aromatic herbs, accompanied by pleasant hints of brininess. On the palate, it is crisp, light and refreshing, characterised by enveloping foam and a satisfying, salty and citrusy finish. Soil: Clay-limestone, medium texture with marls and sandstones. Vineyard: Vigna di Elio; area 0.65 ha, 5000 vines\/hectare. Winemaking\/Ageing: La Matta is a zero dosage sparkling white wine, produced from the vinification of Fiano grapes. The grapes are pressed whole and the base wine is fermented and aged for 6 months in steel tanks. The second fermentation occurs in the bottle with the addition of a portion of the same must from the base wine kept at low temperature. No sugars, yeasts or sulphites are added at the time of bottling. The sparkling wine is not subjected to disgorgement and is left on the sediments produced by the second fermentation.
