BIO* by ANSALDI is a DOC sparkling wine from the beautiful region of Sicily, Italy. Characterised by a brilliant white colour, this organic sparkling wine is crafted with care from the Vigna Abbadessa, cultivated on medium-textured soil with a thin layer of calcareous crust and an ancient layer of peat that imparts vigour and complexity to the grapes. The manual harvest and careful vinification, with fermentation at low temperatures and ageing on the lees for eight months, result in a product of refined elegance and personality. Alcohol content: 12.5. Winery: Controspalliera. Harvest\/Vintage: Manual in 15 kg crates. Organoleptic notes: Features a fine and persistent perlage. Aroma characterised by a complex citrus note with pleasant hints of honey and toasted bread. Fresh and persistent taste. Soil: Medium-textured, fairly deep with a slight presence of skeleton. In depth, it is characterised by the presence of a thin calcareous crust of marine origin, resting on an important layer of &#039;peat&#039;, an ancient soil where the roots settle and find the water resources and macro nutrients for good vigour. Vineyard: Vigna Abbadessa. Vinification\/Ageing: Crushing of whole bunches with a yield in must of 50%. Fermentation at 15-18\u00b0C and ageing on the lees for 8 months. Yield per hectare: 70 q.li\/Ha. An ideal wine for those who appreciate quality sparkling wines and the sustainability of organic production. The 2019 BRUT M.C.
