Ce vin effervescent se distingue par sa vinification soign\u00e9e, qui pr\u00e9voit une cryomaceration des grappes enti\u00e8res \u00e0 0\u00b0C pendant environ 7 jours, suivie d&#039;une fermentation \u00e0 temp\u00e9rature contr\u00f4l\u00e9e de 15\u00b0C avec des levures s\u00e9lectionn\u00e9es. Le sol morainique riche en d\u00e9bris graveleux et en sable contribue \u00e0 exalter les caract\u00e9ristiques organoleptiques du vin.
