Le raisin, r\u00e9colt\u00e9 \u00e0 la main dans de petites caisses fin ao\u00fbt, pousse sur un sol riche en argiles brunes, limon et calcaire, et est vinifi\u00e9 en blanc apr\u00e8s un pressurage doux sous vide, suivant des m\u00e9thodes attentives et respectueuses de l&#039;environnement.
