The 2021 MUJER CABALLO by FIL-LOXERA & CIA is a still white wine from the Valencia region, more precisely from a small vineyard located at the foot of the Sierra de l'Ombria. This very stony, sandy-loam and cool soil hosts ancient varieties of white grapes harvested at dawn in 15 kg crates to preserve their freshness and quality. The winemaking process involves crushing and destemming followed by a 5-day fermentation maceration and free temperature fermentation for 15 days, which gives the wine a characteristic orange colour and a unique aromatic complexity. Vintage: 2021 Alcohol content: 12.5 Harvest/Vintage: Harvested at dawn when the grapes are at their freshest, in 15 kg crates. Organoleptic notes: Golden colour, with a sensation of density in the glass. The aroma is floral and fragrant, with notes of ripe white and yellow fruit, mixed with aromas of ageing on the lees, jam and barrel ageing. Full-bodied and voluminous taste, envelops the mouth and leaves an ethereal sensation at the centre of the mouth. The palate is fresh and light.
