This white wine stands out for its complexity and elegance derived from a long ageing of 276 months. The Chardonnay and Pinot Noir grapes come from selected vineyards in the Valle di Cembra, with a manual harvest that ensures the highest quality. The unique terroir, characterised by glacial deposit soils with polygenic pebbles and a clay-silt matrix, gives this sparkling wine a distinctive character rich in nuances. Alcohol content: 12.5 Winery: Simple Trentino Pergola Vintage: The Chardonnay grapes are hand-harvested after organoleptic tasting; the Pinot Noir grapes are harvested at their peak ripeness. Organoleptic notes: Time plays a fundamental role in the evolution of this special sparkling wine, and each bottle has its own different complexity. From the evanescent foam, the fine perlage, delicate and extremely integrated with the wine, and the deep yellow colour sometimes amber, it is clear that we are facing a unique sparkling wine. Deliberately aged, it releases aromas reminiscent of sweet wines and evolved Rieslings, flint, and well-ripened fruit, complemented by hints of bread crust, liquorice, and ginger. On the palate, the fine carbon dioxide tickles and makes the taste buds more reactive, giving the taste an extreme freshness and liveliness, with incredible flavours that almost recall Scottish whiskies, with toasted oak and tobacco notes; finally, the very long aftertaste, slightly bitter and fresh, invites you to savour again in search of new sensations. Soil: Costi"ola composed of glacial deposit with sub-rounded polygenic pebbles in an abundant reddish clay-silt matrix (Tilldi accommodation). Pressano, dolomite of Serla. Vineyard: The Chardonnay grapes were harvested from a single vineyard in the locality of "Costi"ola" in Mosana di Giovo in the Valle di Cembra.
