Coming from vineyards situated on clayey and limestone soils with a medium texture, this DOC is characterised by careful and environmentally respectful cultivation, with short "Guyot classico" pruning and manual harvesting in crates to preserve the integrity of the bunch. Harvest/Vintage: Manual in crates to preserve the bunch until pressing. Organoleptic notes: Clear appearance, very fine and persistent perlage. Strongly characteristic aroma, highlighting the typical notes of Timorasso sparkling wine, structured with a pleasant hint of bread crust, mineral and floral perceptions with a very slight citrus note on the finish.
