The 2019 PINOT NERO ROS'E Vo' Millesimato M.C. BIO* by VALLAROM is a sparkling rosé from Trentino, a region renowned for its winemaking vocation. This organic and vegan wine is made from grapes grown in the Ventral vineyard, situated on limestone-dolomitic soils, and hand-picked in the early hours of the morning. The rosé vinification, with skin contact maceration for 18 hours and fermentation in steel at controlled temperature, gives this product a unique and distinctive character. Vintage: 2019 Alcohol content: 12.5 Winery: Simple pergola and trellis with Guyot pruning. Harvest/Vintage: Hand-picked in the early hours of the morning and immediately taken to the winery in small crates. Organoleptic notes: Of an intense and vibrant colour, with lively aromas of raspberry, berries and rhubarb. On the palate, it is an explosion of life: savoury, fresh and long. Very balanced, with fine and persistent bubbles. Soil: Limestone-dolomitic Vineyard: The grapes come from the upper part of the Ventral vineyard. Vinification/Aging: Rosé vinification (de saignée) with skin contact maceration for 18 hours in the press, fermentation in steel at controlled temperature.
