The 2022 ASSYRTIKO by ARGYROS is a dry white wine from the DOC region of Santorini, known for its unique terroir and established winemaking tradition. The grapes come from vineyards located at an altitude of 450 metres in the areas of Pyrgos and Imerovigli, cultivated using the "Kouloura" method on terraces called "pezoules" to protect the plants from winds and intense sun. The volcanic soil of ash, pumice stone, sand, and solidified lava gives the wine intense minerality and natural acidity, distinctive characteristics of this denomination. Vintage: 2022 Alcohol content: 14 Winery: The vines are planted on terraces called "pezoules" along the slopes of steep hills to protect them from the winds. The classic training method known as "Kouloura" involves pruning the vines into a "basket" shape, allowing the grapes to grow inside these "baskets", thus protecting them from winds and the hot sun. Harvest/Vintage: Manual harvest in the second decade of August. Organoleptic notes: The wine has a bright straw-yellow colour with slight golden hues. It has aromas of white flowers, with dominant citrus notes. On the palate, lemon is revealed, with well-pronounced acidity and intense minerality. Intense, with a full body and well-balanced, featuring a characteristic prolonged aftertaste. Soil: Volcanic ash mixed with pumice stone, sand, and solidified lava, which together compose the soil of Santorini, known as "aspa". The soil has low organic matter but is rich in essential minerals, excluding potassium; this results in wines with a naturally low pH level and high acidity. Additionally, the lack of clay in the soil provides the wines with a natural immunity to Phylloxera, which has never attacked the vineyards of Santorini. Vineyard: The grapes come from the vineyards of Pyrgos and Imerovigli on the Island of Santorini, exposure: North, altitude: 450m above sea level. At this altitude, the average daytime temperature is lower throughout the year. The vineyards face north, so during the summer, the mild winds known as "meltelia" are cooler. Furthermore, the sea mist that forms at night due to the evaporation of seawater during hot days remains in the area, humidifying the plants. Vines/ha: 2,000-2,300 vines/ha.
