The 2022 Nerello Cappuccio Terre Siciliane BIO* is an organic red wine produced by I Custodi delle Vigne dell'Etna, located in the beautiful region of Sicily, Italy. This still IGT wine is made from nerello cappuccio grapes grown at an altitude of 700 metres on sandy, volcanic soils rich in minerals and with a subacid reaction. The harvest, carried out in October with careful selection of the grapes, ensures the integrity of the fruit, while the winemaking involves a maceration of about a week in steel at controlled temperatures. Organoleptic notes: Wine with an intense red colour and violet reflections, aromas of red fruits, herbaceous notes of Mediterranean scrub. On the palate, it is fruity, mineral, with good persistence. Soil: Sandy, volcanic, very rich in minerals, with a subacid reaction. Vineyard: Altitude: 700 metres above sea level. Winemaking/Aging: Destemmed and pressed. The maceration lasts about a week in special steel tanks, at around 25-28°C. A wine that elegantly expresses the unique terroir of Etna, ideal for pairing with meat dishes and aged cheeses. It is recommended to taste it at a moderate serving temperature to fully appreciate its aromatic nuances and structure.
