The 2023 AZAZEL Tappo Vite is a still red wine produced by La Chimera in the Piemonte region of Italy. This certified organic DOC wine originates from the vineyards of Mompantero (TO), located at an altitude of 600 metres on loose, skeleton-rich soils, predominantly schists and limestones. The winemaking process involves destemming followed by a maceration of 7-10 days on the skins, with malolactic and alcoholic fermentation conducted simultaneously with the inoculation of bacteria, to enhance the organoleptic characteristics of the blend.
