EOS Frizzante Sui Lieviti M.F. is a sparkling white wine produced by LA CHIMERA in the Piemonte region, Italy. Soil: Loose, rich in skeleton; the rocks present on the slope are predominantly calcareous and limestone. Vineyard: Exposure: south, altitude: 750 m a.s.l., area 0.3 Ha, vines/ha 5000, planting density 2.4×0.8. Winemaking/Aging: Destemming of the grapes and then, the must, directly into the press. The maceration lasts only for the pressing cycle (about 2.5 hours). Following this, fermentation begins, and then the wine is bottled during incomplete fermentation. This way, it has a natural sparkle and a pressure of about 2 bar. Vinified without sulphites.
