Winemaking/Aging: Spontaneous fermentation and maceration for 12-15 days in small concrete tanks with various daily pump-overs and sporadic délestage. After racking, malolactic fermentation occurs in the same tanks where the wine remains for several months in decantation. Yield per hectare: 50-60 q.li/Ha for cordone speronato and guyot, 80-90 q.li/Ha for double and single Trentino pergola.
