Its origins are linked to the vineyards of Mango and Ramason, cultivated on calcareous-sandy soils, where manual harvesting at the end of August ensures the quality of the grapes. The winemaking process involves a gentle pressing with dry ice and a controlled fermentation, followed by maturation with batonnage that imparts elegance and aromatic complexity to the wine.
